Couple of things...

Over the last week, I've thought of a couple of things that might help someone else, so I thought I'd share...

  1. Whole chicken.  Weird thing to think of....maybe, but thought I'd throw it out there nonetheless. I used to be a chicken breast girl.  After all, can you get any more convenient?  BUT, sometime over the past few months I've morphed into a whole chicken girl.  It's DEFINITELY more cost effective and I've found it to be more time efficient too!  I keep a couple in the freezer.  The ones I buy are around $4, so really you can buy two for the cost of a bag of breasts.  A couple of days before I expect to have an hour and half or so to deal with it, I stick one in the refrigerator to thaw.  Then, when the chunk of time arrives, I boil a big pot of water, rinse the chicken, cut off the wings and legs, and throw it in for like 45 minutes (or until it's done...the meat will be white).  Pull out the pieces, let them cool, and then pick the chicken off the bone.  I've been shredding/cubing mine and freezing them in 2 cup bags.  Makes it SUPER easy to pull a bag out and thaw for ALL kinds of dishes....tortilla soup, quesadillas, tacos, chicken spaghetti, chicken parmesan, chicken salad, chicken and rice, you get the idea.  THIS time I also froze the chicken broth from the pot.  I have no idea how that's going to turn out.  I haven't thawed or used it, but put approx 2 cups in each bag. 
  2. A recipe that I haven't posted yet.  Taco Lasagna.  It's VERY easy and yummy.  The recipe makes a 9 x 13 pan, so if your family is young, you can half it easily (or invite friends to help you eat it!).  I've made it with lots of substitutions or things left out because of what was on hand and have found it to be forgiving and tasty!  Put a side of rice, fresh fruit, and sour cream with it and you're ready for a yummy dinner!
